By now, I'm sure you've noticed we're getting a new eatery in downtown Bismarck. Months ago, a sign with the words "Insomnia Cookies" popped up in a window.

I think it's safe to say everyone in Bismarck-Mandan has been excited since.

We've been patiently waiting to hear when this establishment will open, and now we have the date!

Never Been To Insomnia?

You've been missing out if you've never been to Insomnia Cookies. Here's what you can expect.

Picture some of the most creative cookie flavors, like PB&J, chocolate peanut butter cup, s' mores, and birthday cake, and you have Insomnia Cookies.

They have all the classics, too, like chocolate chip, chocolate chunk, and sugar cookie.

They even have vegan and gluten-free cookies.

Opening Date

Plan on indulging in delicious cookies and ice cream next week, because Insomnia Cookies is open Saturday, August 31st.

They are having a grand opening ceremony that day to celebrate.

The really great thing about Insomnia Cookies is that they are typically open late and deliver. Some locations stay open until 3 a.m.! -- Hence, the name."

I can't say exactly how late this location will stay open in Bismarck, but imagine having a fun night out in downtown Bismarck. You are out with your friends wrapping up the night, and you all are a little hungry.

You walk down the street and BAM!-- you get some delicious cookies. I can't think of a better after-bar snack.

I would also like to throw this out as an idea: Jimmy John's is open until 1 a.m. I'm begging, can we make this happen, too?!
